- 6 egg yolks
- 1 cup sugar
- 1 ounce lemon juice
- 3 teaspoon cinnamon
- 1-1/2 cup Georgia pecans, chopped
- 1/2 cup white bread crumbs
- 1/4 cup all-purpose flour
- 6 egg whites
Preheat oven to 350 degrees F.
Beat egg yolks. Add sugar gradually to yolks and beat until very creamy. Add grated rind and juice of one lemon. Grind pecans in a nut grinder. Mix pecans, cinnamon, toasted white bread crumbs and flour. Add to egg yolk mixture. Beat 6 egg whites until stiff, but not dry. Fold egg whites into batter.
Bake at 350 degrees F for 40 minutes in an ungreased loaf pan or round layer cake pan. Cool in pan. Dust with confectioners sugar. This is a delicate cake, remove from pan carefully.
