Georgia Pecan Power Bars


    • 1 large egg
    • 3/4 cup honey
    • 1/4 cup canola oil
    • 1 teaspoon vanilla extract
    • 1 cup grated carrots
    • 1 cup chopped pitted prunes
    • 1/2 cup chopped Georgia Pecans
    • 1 cup whole wheat flour
    • 1 cup whole wheat flour
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/8 teaspoon allspice (optional)


Heat oven to 350F. Grease a 9-inch square baking dish.

In large bowl, beat together egg, honey, oil, and vanilla until blended. Stir in carrot, prunes, and pecans. In medium bowl, combine whole wheat flour, oats, baking soda, salt, and allspice. Stir into honey mixture until well combined. Spread evenly in pan and bake 20 minutes or until toothpick inserted in center comes out clean. Cool before serving.
