Lowfat Georgia Pecan Oatmeal Cookies

Ingredients

    • 1/2 cup sugar
    • 1 cup oatmeal
    • 1 cup brown sugar, packed
    • 1/2 cup margarine
    • 2 egg whites
    • 3/4 cup skim milk
    • 1/2 cup applesauce, unsweetened, canned
    • 2 teaspoons vanilla extract
    • 3 cups all purpose flour
    • 2 teaspoons baking soda
    • 1/2 table salt
    • 1 teaspoon cinnamon, ground
    • 1/2 teaspoon nutmeg, ground
    • 1 cup raisins, seedless
    • 4 cups Georgia pecans chopped

Directions

Preheat oven to 375 degrees F.

In a large bowl, cream sugars and margarine with mixer until light and fluffy. Add egg whites, one at a time, mixing well. Add milk, applesauce and vanilla. In a separate bowl, mix together flour, oats, baking soda, salt, cinnamon and nutmeg. Add flour mixture to creamed mixture. Blend well. Fold in the raisins and pecans. Spoon dough by tablespoon onto a cookie sheet coated with nonstick cooking spray.

Bake at 375 degrees F for 9 – 10 minutes or until light brown.
